Dill Pickle Dip with Jalapeño Pepper

Here’s a short and sweet blog post for an easy to whip up, last minute dip for snacking and noshing.

This is the kind of dip you will want with a bag of chips when you find out everyone is coming back to your place to crash and watch the game or movies.

Let’s get right to it. All you will need is some simple, pantry staple ingredients, a bowl and a fork or spoon.

Ingredients:

  • Cream cheese, or labneh (thicker than Greek yogurt)
  • Dill pickles, plus pickle juice
  • Red onion, or shallot
  • Jalapeño pepper
  • Fresh dill
  • Black pepper
  • Everything Bagel Topping
  • Hot pepper flakes

I love using Farmers Cream Cheese, it is softer than the brick cream cheese from the dairy section.  But either one will work. Just make sure it is soft when you get ready to assemble.  So maybe this is the only part of the dip that requires some planning.  Oops.  But labneh will give you the same texture, without the time needed to soften it.

You can use dill pickles or the garlic dill version.  The dill pickle juice, especially if you are using a Dill Pickle (like Bubbies), which is found in the refrigerated Deli section of the grocery store has extra flavour and also the probiotics from the natural fermentation.  The jarred dill pickles you find in the condiment aisle won’t be as healthy- the brine is usually made with just vinegar, so no natural, active fermentation in those jars.  is the best way to cut through the thick richness of the cheese. 

The fresh dill just layers that beautiful dill flavour.  The chopped pickle, red onion and jalapeño add flavour and crunch.

If you don’t have access to a jar Everything Bagel Topping, here is my homemade version!

All you will do is mix everything together in a bowl.  Ideally you want to chill it for a hour or two, to let the flavours meld.  But if that’s isn’t possible, well go ahead and eat it!

I love it with chicharron, but chips, pretzels, even crudités will work great. Or how about using it as a topping for your next burger, or a fun spread inside a sandwich!

Dill Pickle Dip with Jalapeño Pepper

An easy, flavour packed dip that can be whipped up at the last minute if needed. Use it with chips or pretzels, or even spread it on your next burger!

Servings 2 cups

Ingredients

  • 8 oz (227 g) softened cream cheese, or labneh
  • 1 cup finely diced dill pickles
  • 1/4 cup finely minced red onion, or shallot
  • 1 jalapeño pepper, seeded and finely diced
  • 3 tbsp pickle juice, use a juice from a jar of naturally fermented pickles found in the refrigerated section of the grocery store for best results
  • black pepper, to taste
  • hot pepper flakes, to taste
  • Everything Bagel topping, for garnish

Instructions

  1. In a bowl mix everything together except the Bagel Topping. Once the mixture is smooth and well blended, taste and re-season as desired. Then sprinkle on a generous amount of the Bagel Topping.
  2. Ideally this dip should be chilled for 1-2 hours for the flavours to meld.
  3. Serve with chips, crudités, pretzels, or even use it a spread on your next sammie or burger.

Recipe Notes

You should get between 1 1/2 and 2 cups.  I don't include salt, since the pickle juice will have salt in it.  Feel free to salt if you find it necessary, but don't add before you've tasted the final dip.
