Prosciutto Wrapped Asparagus with Sumac

A fabulous way to serve up the seasons freshest asparagus. This appetizer or side dish comes together in mere moments. Just wrap the prosciutto around the asparagus spears, roast, and then enjoy the play of flavours, the sweet nuttiness of asparagus against the salty prosciutto and parmesan cheese, and the accent of citrusy sumac. They make great soldiers for soft boiled eggs!

Ingredients

  • 12 medium to large sized asparagus spears. Too thin and they will scorch or over-cook before the meat is done.
  • cracked black pepper
  • 6 slices of prosciutto
  • olive oil
  • sumac for garnish can use fresh lemon juice instead
  • 1/3 cup of freshly grated parmesan cheese or to taste

Instructions

  1. Preheat the oven to 400F and line a baking sheet with parchment paper.
  2. Trim the ends of the asparagus if needed. Lay them out on the baking sheet and drizzle with cracked black pepper.
  3. Cut each of the prosciutto slices lengthwise. Wrap on slice around each spear. Line them up on the on the baking sheet and drizzle with 1 to 1/2 tbsp of olive oil.
  4. Bake on the centre rack till the asparagus is just tender so that a fork can pierce it, and the meat is crisped up, about 10-12 minutes, depending on your oven. Feel free to place under the broiler for a more crispy finish.
  5. Place the spears on a platter and garnish with a good sprinkling of sumac or lemon juice, and plenty of parmesan cheese.
  6. Serve warm. Store leftovers in a sealed container. These can be re-crisped under the broiler or air fryer. Only a few minutes are needed, so keep an eye on them.
