Total Time 30 minutes

Ingredients

  • 10-12 strips of thick cut bacon
  • 1 tbsp or shot of brewed espresso or very strong coffee
  • 1 tbsp bourbon
  • 1 tbsp maple syrup
  • 4 1/2 tsp brown sugar

Instructions

  1. Preheat the oven to 350F. Use the middle rack
  2. Lay bacon slices out on a parchment lined baking sheet. Depending on the size of your bacon, you may need two sheets.
  3. Blend the espresso through the brown sugar in a small bowl.
  4. Brush the top side of each slice with some of the mixture.
  5. Bake for 11 minutes (if your bacon is thicker rather than thinner, go for 12 minutes)

  6. Remove baking sheet(s) from the oven, and turn the heat up to 400F
  7. Carefully turn the bacon over, and brush the other sides with the rest of the glaze.
  8. Bake another 15- 17 minutes (depending again on the thickness) until the bacon is gently crispy (you don't want it burnt or rock hard) and the glaze has thickened somewhat. Keep an eye on it, as your oven will also affect the timing.

  9. Remove the sheets to a cooling rack and let the bacon sit for a few minutes to let the glaze set.
  10. Serve as is (that is if it even makes it to the table!!)
